This single-plot Cuvée "Les Houtrants" comes from a vine planted in 2004, halfway up the hillsides of Cumières. In order to respect and translate the best of this solar Terroir at the heart of this Champagne, we have chosen to co-plant 5 grape varieties. When designing this Champagne, everything is done to limit the influences that could modify the origin of this historic plot for its precocity.

TERROIR : Clayey-silty soil with beautiful fragments of flint (millstone). The bedrock is composed of hard sandstone with calcareous marls.

BLEND : Pinot noir, Meunier, Chardonnay, Petit Meslier and Arbane.

VINEYARD WORK AND VINIFICATION :

– Plot worked according to the principles of biodynamics since 2018

– Traditional pressing to extract only the “head of the vintage”
– Vinification with natural yeasts from the plot
– No wood-based breeding
– Malolactic fermentation not sought
– No gluing, no filtration
– Multi-vintage with conservation of reserve wines in magnums at low pressure

TASTING : Champagne which, through the co-planting of five Champagne grape varieties, expresses the identity of a place dear to the Geoffroy family. With a pale yellow color with golden highlights, this cuvée offers a bright and dynamic effervescence. On the nose, a delicate and airy fragrance of white flowers, citrus fruits and white-fleshed fruits.
The palate is masterful. The childhood aromas of bitter almond, vanilla biscuit, madeleine fresh from the oven or even fireplace, rise to the surface. Surprising for a Champagne that, during its aging, did not encounter any oak barrels. The palate is precise, refined and energetic. The absence of dosage allows this Cuvée to retain a very beautiful purity in the finish and above all, a lot of length on the minerality and the beautiful bitters.

PAIRINGS : In order to fully appreciate the mineral richness of this plot, it is recommended to taste this Champagne as an aperitif when the taste buds are alert.
