Vintage Blanc de Blancs

This vintage comes from the blend of two plots located in the confluence zone between the Seine and the Arce, in the Côte des Bar.
Two grape varieties: Chardonnay (80%) and Pinot Blanc (20%).
Two plots: “Les Devoix” in Merrey-sur-Arce (planted 1983) and “Val Moré” in Bar-sur-Seine (planted 1954).
Soil: Clayey limestone
A vintage : 2017
Vinification : Juice exclusively from the hearts of the cuvée. 5% vinified in oak barrels.
Dosage : 4.5 g/L
Tasting: Lemon yellow color with pale yellow-green highlights. Delicate nose, notes of lime, white peach, acacia flowers, fresh grapes, limestone. Clean and fresh palate with a pulpy and crisp fruity material, underlined by a well-taut lemony acidity.
Food and wine pairings: Fine clairs oysters, Avocado and scallop carpaccio with passion fruit, Prawns and creamy risotto with crispy asparagus, Fresh goat cheese.

For Simon and Marie Normand, who learned all the winemaking techniques from their parents while simultaneously cultivating respect for the vines inherited from their ancestors, wine can only be an extension of the meticulous work carried out in the vineyards throughout the seasons. Each vineyard has its own unique characteristics, and the grapes produced by these vines reveal particular aromas linked to the typicity of the soil and the grape varieties used, some of which have been planted for several decades.

“A vine has a unique story, and together at Domaine La Borderie, we have reflected on the distinctive traits of each of the cultivated plots in order to create wines using a highly refined parcel-by-parcel selection process. We focus on terroir and, above all, micro-terroir,” explain the brother and sister. Purists at heart, they are meticulous in understanding their grapes down to the smallest detail of their expression, crafting blends that, in their eyes—and to their nose and palate, too!—will produce the finest wines.
