A Plot: “Val Moré” in Bar sur Seine.
One year : 2015
Vinification : Juice exclusively from vintages. Malolactic fermentation carried out in stainless steel vats.
5% Oak barrel (blocked MLF).
Aging : 55 months in cellar.
Dosage : 3 g/L
Tasting : Pale yellow color. Nose with notes of blackcurrant, redcurrant, smoked limestone, toast, almond, honey, sweet spices. Frank, mineral, saline and vinous palate.
Food and wine pairings : Royal sea bream, steamed sea bass, pumpkin velouté, sliced duck breast, braised beef cheek, wild garlic tomme.
