The cuvee
La Borderie - Douce Folie NV Rosé
A grape variety : Pinot Noir.
A plot : “Douce Folie” (Merrey-sur-Arce): south-west exposure (good maturity), plot selected for its suitability for producing colored wines: 50-year-old vines, limited yields, specific work: pruning, disbudding, green harvesting, manual leaf removal, grassing, plowing.
One year : Rosé produced only in vintages that allow for perfect health and optimal maturity of the grapes.
Vinification : Vatting for about 48 hours with whole harvests in stainless steel vats, maceration interrupted when the desired color is obtained. Malolactic fermentation carried out in stainless steel vats.
Aged for 24 months in the cellar.
Dosage : Extra Brut.
Tasting : Light, medium-bodied color. Floral notes of violet, fresh berries: raspberry, blackcurrant, morello cherry, mineral notes, expressive, fine and delicate nose. Supple attack on the palate, creamy effervescence, fleshy, tangy palate, quite vinous, gourmet, fruity.
Food and wine pairings : Iberian ham and cold cuts, Eggplant rolls with ricotta and pancetta, Beef carpaccio, Tiramisu with pink biscuits and strawberries.
