Clandestin, was born in 2015 and is now located in Landreville.
Benoit Doussot, a young talent who studied at the Beaune wine school is at the head of this small haute couture trading house whose goal is to promote the terroirs of Aube, the southernmost area of Champagne. The terroir: mainly Kimmeridgian and Portlandian. The grapes come from winegrowers working in Organic.
Clandestin, which means secret or hidden, refers to the source of this Champagne de Terroir: plots of Pinot Noir, too long undervalued.
The musts are fermented with indigenous yeasts, in demi-muids and in Burgundy pieces (228L). All Clandestin wines are not dosed.
