Created in 2012, the Domaine de Marzilly is located in the immediate vicinity of Hermonville, in the Massif de Saint-Thierry, the northernmost region of Champagne. It is in this place conducive to the cultivation of vines that Champagne Ullens finds its origin.
“For our single-plot vintages, we use an old 4,000 kg Coquard Champagne press, fully restored in 2018, in keeping with tradition. Our cellar tells the extraordinary story of a man driven by his passion.” In front of these oak barrels sheltered by old stone, you have to let the alchemy take place, and know how to wait for the right moment to finally be able to savour the taste of the new vintage.
The transmission of traditional know-how is one of the fundamental values of the Domaine de Marzilly. “Also, for our single-plot vintages, the riddling is done by hand, following a rigorous process that lasts several weeks.” The single-plot vintages of Champagne Ullens are exclusively vinified in oak barrels. “Out of passion and respect for this historic material, we have created our own barrels, made from the trees in our park.”
To stimulate and protect biodiversity on our land, we have reintroduced French rustic black bees, adapted to local ecosystems. Every year, we see an increase in their population in the Domaine's hives. For us, this is the best proof of their well-being!
