Florent and Julien Mignon left the local cooperative in 2015. Accompanied in their project by their father, the two brothers carried out their first harvest in 2016, in Cramant.
Most of their vineyard plots are located on the Côte des Blancs with the terroirs of Cuis, Cramant and Avize. They also inherited some pinot noirs in the heart of the Marne Valley with Cumières and Damery.
Today the estate covers 8.80 ha, but not everything is yet in production. In 2024, they will bottle around 40,000 bottles, half of their development potential. Step by step, they are building the future by giving themselves the time to work the vines as healthily as possible to highlight their terroirs.
In the cellar, barrels and tuns predominate, although a few stainless steel vats are also used to bring freshness to the wines. The brothers have a non-interventionist philosophy and do not necessarily seek malolactic fermentation. Working with no added sulphites and long ageing of the grands crus are also projects for the future...
