The Fabrice Pouillon Method
Champagne R. Pouillon & Fils, located in Mareuil-sur-Aÿ, embodies a traditional and authentic approach to Champagne. Founded in 1947, the estate is now managed by Fabrice Pouillon, who perpetuates the family's expertise with a philosophy focused on respecting life and the purity of the fruit.
The vineyards, spread across the Marne Valley, the Montagne de Reims, and the Aisne region, are cultivated according to biodynamic principles and sustainable farming practices: plowing, cover crops, natural preparations, and hand-harvesting.
In the cellar, vinification is carried out plot by plot, in barrels or large casks, using indigenous yeasts and very few additives. Each cuvée reflects the identity of its terroir—finesse, energy, and depth. These are vibrant, expressive, and remarkably precise Champagnes, reflecting Fabrice Pouillon's vision.
