Located in Congy, in the heart of the Petit Morin Valley, Domaine Clément & Fils has existed under the current brand since 1981. Four generations have succeeded one another until the arrival of Aurélien in 2013. He will carry out his first harvest in 2017.
The Estate represents 6.5 ha of vines, including 5.5 ha in the communes of Congy and Coizard-Joches, and 1 ha in Les Riceys in the heart of the Côte des Bar.
A little-known or unknown terroir located between the Côte des Blancs and the Sézannais, the soil is generous in clay and abundant in flint, forming a thick layer on the bedrock essential for the development of the roots of the vines: chalk.
Faithful to traditions and his lands, Aurélien works his vines without herbicides or pesticides, and began organic certification in 2020.
In the cellar, the Domaine has managed to preserve a large number of artisanal tools and practices: the 1958 Coquard vertical press, enamelled and stainless steel vats and also 205L Champagne barrels, bottling, riddling, disgorging and dressing by hand.
