Pierre Paillard

Established in Bouzy for 200 years, the Pierre Paillard estate is today run by two brothers, Antoine and Quentin Paillard. They work a vineyard of 11 ha which is located entirely on the territory of Bouzy.

Significant work is being carried out in the vineyards where the insecticides and herbicides are banned. The soils are worked meticulously and an addition of organic amendment (homemade compost) helps the development of microbial life, root growth and the assimilation of nutrients already present in the soil.

Particular attention is also paid to the choice of plant material, where they favor the replanting of mass selection from their old vines as well as Pinot Fin, traditionally planted in Burgundy. These vines offer us in return low yields, facilitating the harvest of fully ripe grapes expressing their terroir.

Their approach is intended to be low intervention in the cellar in order to express as naturally as possible the personality of their Pinot Noirs and Chardonnays grown on the clay-limestone soils of the Bouzy terroir. Fermentations are carried out using indigenous flora, malolactic fermentation is never blocked and sulphur doses are minimal.

The wines are vinified by plot and aged for 11 months on lees in vats and barrels then in cellars where they will age up to 10 years on lees for their finest vintages.
