Pierre Paillard - La Grande Recolte 2008
The quintessence of the Pierre Paillard vineyard, La Grande Récolte 2008 is a blend of old Chardonnay and Pinot Noir vines.
It is in our 19th century cellars located at a depth of 16 meters and at 10°C that our wines will become champagne. The combined effect of a slow second fermentation (2 months) and 10 years of aging on lees will provide the desired balance and texture.
The 2008 vintage displays both complexity and definition, a great year.
Grape varieties : 55% Pinot noir, 45% Chardonnay
Dosage : 1.8 gr/L (Extra-Brut)
Aging : 10 years on lees in cellar at 10°C
Soils : Clayey-limestone and chalky subsoil
Vineyard facing due south and planted mainly with massal selections from our old vines as well as Pinot Fin.
