Looking back on the first wine-growing year, 2021

A more than complicated wine year. The vagaries of Mother Nature make us think and realize that we are not decision-makers, but only actors in this way of life.

80% less harvest. Nothing was spared for this first year and this choice to make wine. A tornado in early June on the vineyard of Lagery, destroyed all hope of making some grapes. On the vineyards of Ludes and Taissy It's not better. Record rainfall with more than 100mm of rain on July 14 when the fireplace was relit.

Start of the season where we choose to take the specifications of Organic Viticulture literally.
History will teach us that we are currently not sufficiently equipped in terms of equipment, responsiveness and human resources to go down this path. However, we keep it in a corner of our mind and still try to get closer to it.

A harvest that was announced to be complicated and it was. A permanent wait for a few baskets of grapes still allows us to make a few meager presses. The different juices that flow from it are exceptional in quality. The selection of grapes allowed us to keep only those of good maturity and aromatic concentration.

The juices ferment in barrels for a stronger expression, without ever seeking the woody side of the barrel, but rather the nobility of the material and the micro oxygenation of the wood. Fermentations that are good and allow us not to intervene.

The first tastings of clear wines take place with a new vision of wine, and a desire to do things differently with a single goal, the quality of Champagne. Many moments of exchange and sharing allow us to realize the potential of this year.

The time for the first bottling comes with the choice of bottling, drawings under cork with a desire to have longer aging in the cellar.
