CHAMPAGNE FROM A CREATIVE WINEGROWER
A family that cultivates, preserves, and respects the land… These are the values passed down to Tristan Hyest. Thanks to his father, he decided to learn the art of winemaking and viticulture. He also inherited the exacting standards of Champagne. From his experience in various vineyards, he gained essential expertise for establishing his own winery in the early 1980s. His parents' investment and their desire to preserve this heritage led him to enroll in viticulture school. Thus, in 1999, he decided to join the family estate, eager to learn from his father and acquire solid experience. In 2001, he had the opportunity to personally take over some vineyards and obtained replanting rights. Then, in 2003, with a small 2.5-hectare estate, he decided to embark on crafting his own cuvées. These are handcrafted champagnes that embrace a style, a terroir... his passion. Tristan ages his wines in tanks, although oak has only recently been introduced into the cellar. Malolactic fermentation has been carried out.
