Here are the values that were passed to Tristan Hyest. Thanks to his father, he decided to learn the work of the vine and wine. He also received as an inheritance the demand for champagne.
From his experience in different vineyards, he gained the expertise that was essential for his installation in the early 1980s. His parents' investment and the desire to preserve this heritage pushed him to join the School of Viticulture.
It was therefore in 1999 that he decided to join the farm with the desire to train with his father and acquire solid experience.
In 2001, he had the opportunity to personally take over some vines and obtained replanting rights. Then in 2003, with a small 2.5 ha farm, he decided to start producing his own vintages. Creative champagnes that assume a style, a terroir... his passion.
Tristan carries out his aging in vats, although wood has just been introduced into the cellar. Malolactic fermentations are carried out.
