A Basement : Kimmeridgian Limestone.
A Soil : Clayey marl
Blend : 70% Pinot Noir (partly vinified in wood) 23% Chardonnay 7% Pinot Blanc
Base 2020 blend with 15% reserve wines.
Juice exclusively from vintages, 10% vinified in oak barrels.
Aged for 30 months in the cellar.
Dosage : 4.5 g/L
Tasting: Pale gold color, amber highlights. Elegant and floral nose, spicy notes, dried fruits. Acidulous, ample, fruity and tense mouth.
Food and wine pairings : Salmon tartare, avocado and pomegranate, Potato and shrimp bricks with preserved lemon, Cod fillet in lomo, orange endives and honey sauce.
