Northern exposure.
Vinification: Juice exclusively from the vintage.
Malolactic fermentation carried out in stainless steel vats.
12% barrel (blocked MLF).
Aged for 30 months in the cellar.
Dosage: 3 g/L
Tasting: Bright and fairly dense color.
Subtle and refined nose, notes of smoky limestone, scents of fresh grapes, apple, cherry. Notes of almond, liquorice, pink grapefruit, fresh blackcurrant, wild strawberry, with more heady notes of honeysuckle, pepper and sweet spices.
Contact in the palate is clean and fresh, creamy and melted effervescence. Pulpy and crunchy fruity material. Frankness, chewiness and length on the palate. Balanced and concentrated, crystalline ensemble.
Food and wine pairings: Smoked salmon cannelloni with crab, hot oysters au gratin with Champagne, pan-fried cod fillet with chorizo, potato mousseline with shallots, turbot fillet, celery puree and onion juice, roast rack of lamb, sautéed potatoes with wild mushrooms.
