Un subtil assemblage des trois cépages, l’Extra-Brut est représentatif de nos multiples terroirs et cépages : un remarquable assemblage de finesse et de complexité.
Pratiques culturales : Vignes cultivées dans le respect du vivant. Âge moyen de 30 ans.
Assemblage : 60% Pinot Meunier • 30% Chardonnay • 10% Pinot Noir. Dont 40% de vins de réserve des années antérieures conservés en barriques.
Vinification : Raisins cueillis à maturité optimum. pressurage traditionnel • Fermentation alcoolique en cuve, en foudres et en barriques • Fermentation malo-lactique partiellement réalisée • Élevage sur lies fines pendant 6 mois.
Dosage : Dégorgement à la volée. 4,5 g/L.
