Historique : Créée en 1955 par Robert Fleury, la cuvée tradition change son nom en 2010 pour devenir le « Blanc de Noirs Brut ». Chaque nouveau millésime s’ajoute au précédent au cœur d’une réserve perpétuelle en foudres, méthode autrement appelée Soléra inversée. S’ensuit un vieillissement sur lattes de 4 ans.
Assemblage et vinification : Pinot Noir 100%. Assemblage 2019 (45 %) et vins de réserve. Vinification en cuves thermo-régulées et foudres de chêne pour les vins de réserve. Fermentation malo-lactique Dosage : 3.2 g/L - Degré alcoolique : 12 °
Dégustation : Du pur Pinot Noir, teinte or paille, nez expressif et élégant, fruité délicat sur la pêche blanche et l’iris. Attaque fraîche, belle structure et fruité persistant.
Potentiel de garde : 3 à 5 ans
