Champagne Hervé Jestin - Vintage 2007

Vintage 2007 is the second vintage from the house founded by Hervé Jestin, a renowned expert in organic and biodynamic viticulture.

This blend consists of 25% Pinot Meunier from Cumières (Domaine Georges Laval), 50% Chardonnay from Trépail (Domaine David Léclapart), and 25% Pinot Noir from Bouzy (Domaine Benoît Lahaye). The grapes are harvested on fruit days, according to the principles of biodynamics.

This exceptional sourcing reflects one of the finest terroirs in organic Champagne viticulture. The vinification is carried out with great precision, followed by fermentation and aging in French oak barrels from the Allier. Malolactic fermentation takes place during approximately 10 months of lees aging.

Champagne Jestin

In the heart of the Marne Valley, in Cumières, Hervé Jestin founded his own Champagne house in 2006 after years as an oenologist and consultant in the Champagne region. A pioneer of organic and biodynamic viticulture, he employs a demanding approach: harvesting on "fruit days," using indigenous yeasts, aging in oak barrels or tanks depending on the cuvée, and minimal intervention to allow the terroir to express itself fully. The estate is based in emblematic terroirs (Cumières, Trépail, Bouzy Grand Cru) and collaborates with prestigious winemakers such as David Léclapart, Vincent Laval, and Benoît Lahaye. These are fascinating Champagnes, characterized by great finesse and vibrant energy, revealing a strong personality, a lively minerality, and an authentic expression of the Champagne terroir. Two cuvées are available: Vintage and Clos de Cumières.
