Plot: Les Hautes Mottes. Le Mesnil sur Oger – Grand Cru. Very fine, well-structured surface soil. Almost non-existent transition horizon. Subsoil, very pure and compact chalk.
Viticulture: No synthetic pesticides. Respectful grassing and mechanical tillage. Taking into account lunar cycles in the work of the vineyard. Use of plants in herbal tea and decoction.
Harvest: 2019, Spontaneous fermentation. Vinification in wood then aging on lees for 18 months. No fining or filtration.
