VINTAGE 2020
- Philosophy: Precise and sustainable viticulture that respects the soil, the vine, biodiversity, and people. Grapes are harvested at full maturity with parcel-by-parcel vinification.
- Illustration: Limestone marl
- Terroir: Côte des Bar, Gyé-sur-Seine – clay-limestone soils over Kimmeridgian marl.
- Farming: Natural grass cover and soil ploughing. Preventive vineyard practices: careful pruning, debudding, leaf thinning, and meticulous trellising.
- Vinification: 100% Chardonnay – 15% from lieu-dit Comelle Navier (harvested 03/09/2020), and 85% from lieu-dit Davagné (harvested 04/09/2020). Grapes pressed with traditional Coquard press.
- Low-temperature alcoholic fermentation (13°C) using in-house S. Bayanus yeast.
- Malolactic fermentation completed. Aged on lees until June.
- Unfiltered and not cold-stabilized (a light natural sediment may appear over time, a sign of a living wine).
- Bottling: 19/07/2021
- Disgorgement: 03/2025
- Dosage: 2 g/L – Extra Brut
- Tasting Notes: Bright pale yellow with subtle green reflections. Fine, lively bubbles forming a persistent bead. A complex, intense, and refined nose with notes of apricot, toasted almonds, spices, and butter, with a delicate mineral touch. The palate reveals flavors of peach and pear with a spicy finish, offering harmony and depth.
