Jean Josselin - Aux Origines 2019

VINTAGE 2019

This 100% Pinot Noir vintage Champagne is illustrated by the root system of a vine, symbolizing both the origin and heritage of the first Champagnes crafted by Jean Josselin. The roots also evoke the vital importance of soil health—allowing vines to dig deep into the bedrock for strength and identity.

  • Philosophy: Precise and sustainable viticulture that respects the soil, the vine, biodiversity, and people. Grapes are harvested at full maturity with parcel-by-parcel vinification.
  • Illustration: Root system
  • Terroir: Côte des Bar, Gyé-sur-Seine – clay-limestone soils over Kimmeridgian marl.
  • Farming: Natural grass cover and soil ploughing. Preventive vineyard care: meticulous pruning, debudding, leaf thinning, and careful trellising.
  • Vinification: 100% Pinot Noir from lieu-dit Courbenne, harvested on 06/09/2019 and pressed on a traditional Coquard press.
  • Low-temperature alcoholic fermentation (13°C) with house S. Bayanus yeast and indigenous yeasts.
  • Malolactic fermentation completed. Aged on lees until July.
  • Unfiltered and not cold-stabilized (a slight natural deposit may form over time—a sign of a living wine).
  • Bottling: 23/07/2020
  • Disgorgement: 11/2024
  • Dosage: 2 g/L – Extra Brut
  • Tasting Notes: Golden yellow robe. Powerful, complex nose revealing a mature wine. Dominant tertiary aromas: brioche, honey, biscuit, baked pear, with subtle hints of cinnamon and licorice. Full-bodied and generous on the palate with perfect balance and long presence.
  • Food Pairing: Roast turkey with chestnuts, or scallops over truffled polenta.
  • Josselin Family’s Insight: This Champagne is made for lovers of mature, structured wines. A perfect match for rich, flavorful dishes: foie gras, dark poultry, and festive gourmet meals.
  • Winemaker’s Note: Its golden robe and powerful, complex bouquet reveal a fully developed wine. Tertiary aromas dominate: brioche, butter, honey, biscuit, baked pear, with a spicy touch of cinnamon and licorice.
