Jean Josselin - Alliance NV
Historical
This Champagne entered the range, thanks to Jean-Pierre Josselin, who decided to plant Chardonnay (white grapes) on the Côte des Bar in 1990.
• Philosophy : Precise and reasoned viticulture respecting the soil, the vine, biodiversity and people (TERRA VITIS label), harvest at full maturity and plot-by-plot vinification
• Terroir : Côte des Bar , Gyé-sur-Seine, clay-limestone soil on Kimmeridgian calcareous marl
• Cultivation : Natural grassing and plowing of the soil. Prophylactic measures (careful pruning, disbudding, leaf removal, careful training)
• Grape variety : 70% Chardonnay 30% Pinot Noir
• Vinification : Lieu-dit "Davasgné". Pressed on traditional Coquard. Low temperature alcoholic fermentation 13°C (homemade yeast S. Bayanus) and indigenous yeasts. Malolactic fermentation carried out. Aged on lees until June. Unfiltered wine and not cold-aged (a slight deposit may form over time, a sign of a living wine)
• Draw : 07/21/2021
• Dosage : 2.5 g/l - Extra-brut
• Organoleptic analysis : Straw yellow color. Fresh nose with notes of acacia, quince and mint. Attack on the palate marked by the freshness of the Chardonnay . The Pinot Noir ensures a flattering and elegant fruitiness, with a lemony finish.
• Food/wine pairing : Aperitif, grilled lobster
