HARVEST 2022

  • Philosophy: Precise and sustainable viticulture that respects the soil, the vine, biodiversity, and people. Grapes are harvested at full maturity and vinified parcel by parcel.
  • Illustration: Chardonnay and Pinot Noir leaves
  • Terroir: Côte des Bar, Gyé-sur-Seine – clay-limestone soil over Kimmeridgian marl.
  • Farming: Natural grass cover and soil ploughing. Preventive vineyard care: meticulous pruning, debudding, leaf thinning, and precise trellising.
  • Vinification: From lieu-dit Davagné, 70% Pinot Noir harvested on 04/09/2022 and 30% Chardonnay harvested on 11/09/2022, pressed using a traditional Coquard press.
  • Low-temperature alcoholic fermentation (13°C) with house S. Bayanus yeast and indigenous yeasts.
  • Malolactic fermentation completed. Aged on lees until June.
  • Unfiltered and not cold-stabilized (a slight natural deposit may appear over time—a sign of a living wine).
  • Bottling: 20/07/2023
  • Disgorgement: 03/2025
  • Dosage: 2.5 g/L – Extra Brut
  • Tasting Notes: Pale straw yellow robe. Fresh nose with notes of acacia, quince, and mint. The attack is bright and fresh thanks to the Chardonnay, while the Pinot Noir brings flattering and elegant fruit, with a citrusy finish.
