Terroir composed of 100% chalk
Vines planted in 2001, located in Fontaine-sur-Aÿ , southern exposure

VINIFICATION

Manual harvest with sorting of grapes
Direct pressing with selection of the first juices
Cold settling for 12 to 24 hours without enzyme then barreling
Fermentation in barrels, demi-muids and tuns

BREEDING

8 months undergrowth
40 months on slats in the cellar minimum
3 months minimum after disgorging
Partial malolactic fermentation
No sticking and light filtration
