Blend composed of 55% Chardonnay, 25% Pinot Meunier and 20% Pinot Noir
Soil composed of 60% chalk and 40% flint
Vineyards located in the villages of Moussy , Pierry and Chavot-Courcourt
VINIFICATION
Manual harvest with sorting of grapes
Direct pressing with selection of the first juices
Cold settling for 12 to 24 hours without enzyme then barreling
Fermentation in barrels, demi-muids and tuns
BREEDING
8 months undergrowth
40 months on slats in the cellar minimum
3 months minimum after disgorging
Partial malolactic fermentation
No sticking and light filtration
Disgorging with liqueur vinified and aged in barrels
