Vinifiée et élevée en fûts de Bourgogne (228 L) pendant 9 mois, puis affinée sur lies pendant plus de 3 ans, ce champagne révèle une complexité et une profondeur remarquables. Vendanges 2022, mise en bouteille juillet 2023, dégorgé en février 2026 et dosé Extra Brut à 0,2 g/L.

Une expression précise et structurée du Chardonnay. Au nez, des arômes de fleurs séchées, de légères notes herbales et de camomille, suivis de subtiles notes de chêne de bois toasté, de noisette et d'amande. À l'aération, le vin gagne en profondeur, révélant des notes de poivre blanc, de noix de muscade et de zestes d'agrumes. La bouche est directe et linéaire, portée par des arômes de fruits frais de poire et de pomme verte. L'élevage en fût apporte texture et profondeur, tandis que l'acidité préserve la clarté et la tension. La finale est longue, saline et vibrante, marquée par des zestes de citron vert et une fine et noble amertume. Un chardonnay façonné par le chêne, le temps et la précision.

Thomas Herbert and Marie-Charlotte Mignucci crafted their first wines from the estate's 3 hectares and the finest grapes from their plots in Rilly-la-Montagne, Ludes, Trois-Puits, Verzenay and Mailly.

All their wines are vinified exclusively in Burgundy barrels. No bottle leaves the cellar before spending at least three years on its lees. Their approach is committed: ethical, respectful of the soil, and free from chemicals.

Herbert & Co. is the story of two wine enthusiasts who dreamed of taking over the family estate and who now dedicate themselves wholeheartedly to creating precise, elegant, and concentrated wines.
