Doyard - Œil de Perdrix NV
This vintage takes its origins and its name from ancient times (18th and early 19th century). The impossibility of artificially "decolorizing" the juices of black grapes led to the production of a Champagne with a color tainted with an "Œil". This designated a Champagne slightly tinged with pink, like a Partridge's Eye. It is a pressed "rosé": an authentic champagne, combining freshness, elegance, vinosity, length, with a complex nose, pleasantly marked by aromas of red fruits.
- Blend of 2 grape varieties : Chardonnay 25% and Pinot Noir 75%.
- Origin of the grapes : Chardonnay from Avize and Pinot Noir from Aÿ.
- Must from the first press for Chardonnay, musts from the first and second presses for Pinot Noir.
- Pinot Noir vinified in barrels of at least 5 wines.
- No chaptalization (natural alcoholic strength).
- No malolactic fermentation.
- Dosage : 3 g sugar/L.
- Around 3,000 bottles are produced from this vintage, only the great vintages.
