Doyard - Clos de l'Abbaye 2016
Clos de l'Abbaye is made up of a half-hectare plot of Chardonnay, entirely isolated and planted in 1956. Its location and its very calcareous soil give it a very early maturity. The very environmentally friendly cultivation method excludes any chemical product input and aims for a low yield (35 to 40 Hl/Hectare). The soils are notably worked by horse. Only the juices from the first pressing are vinified undergrowth, without chaptalization or research into malolactic fermentation.
