Première cuvée du domaine familial et signature d’un travail partagé, « Uni-Terre » s’est reposée 10 mois en fût de chêne et 3 ans dans nos caves.
L’idée, c’était de donner du temps au temps, de laisser les arômes exprimer tout leur potentiel.
Ce travail de vinification, on l’a souhaité volontairement épuré et sincère. Sans filtration, ni passage au froid.
Après la maitrise et la patience durant ces longues années, est apparue la surprise d’une richesse aromatique intense.

STYLE EXERCISE

The Oudiette x Filles style is an authentic, fine, refined style which draws its strength and elegance from its Champagne terroir. In love with this land, we rediscover every day the richness and strength of our soils which share their most beautiful secrets with us. There is nothing more enjoyable than walking through our vineyards, watching them blossom throughout the seasons, to understand the wonderful history of this land. It is a real work of patience and passion. This mastery of the land that we have acquired is a subtle mixture of “common peasant sense” inherited from our ancestors and the contributions of new knowledge and new technologies.

THE PLOTS

Beaunay is a small village located in the Coteaux du Petit Morin. Here, the coast curves, it creates undulations, it forms promontories, cirques which ensure beautiful exposures to each of our plots. On these chalk soils formed millions of years ago, our plots cover this very particular terroir of Champagne. We cultivate 8 of our plots and the 3 Champagne grape varieties there, all facing south-south-east and south-west on different types of soil. The 9th and oldest of our estate is located in the Marne Valley in Celles-lès-Condé. Sometimes clayey, sometimes silty, the different soils of our plots offer our grapes their specificity which allows us to ensure all the typicity of our wines. Our 3 Champagne grape varieties, Pinot noir, Meunier, Chardonnay, benefit every day from the richness and variety of these soils and subsoils.

SIGNATURE

What better way to translate our love of the vine than to express it through wine? This first vintage is the fruit of the passionate work of three generations. Without our ancestors, the vines would not have been able to offer us these magnificent grapes. We pay particular attention to our vineyard and the production of our grapes. With little intervention, we let our wines live and we adapt our vinification each year in order to reveal their full nature and best express our terroir. To produce our champagnes and gently reveal their aromas, we have chosen to use Burgundy barrels from several wines.
