An atypical 100% Meunier Ratafia , made with passion, in accordance with a recipe by Edmond Moussé, of which only his son and grandson have inherited the secret.
It fits naturally into the DNA of the house, and allows unique Meuniers to find a new form of expression. The singularity and authenticity of the terroir are fully expressed, through a Ratafia with an amber color.
DEVELOPMENT
- Ratafia made with homemade Champagne marc, from Meunier wines
- Micro vinification of rebèches – Fermentation of Champagne marc in concrete vats
- Double distillation of rebèche wines and marcs
- Mutage of Meunier juices
- Natural cold transfer – unfiltered
TERROIR AND SOILS
Cuisles
The soils are made up of 4 very distinct layers:
- 20 cm of clayey topsoil
- 40 cm of very draining clayey sand (with 80% sand)
- 30 cm of green clay (Illite), water reserve of our soils
- Calcareous marl: chalk + clay
AGING
24 months in barrels
