The cuvee

Geoffroy - Terre 2009

This vintage cuvée is the flagship of our House. And to guarantee excellence, this Champagne is only produced in exceptional years; always in small quantities. The philosophy behind the creation of this Champagne is to let the quintessence of the vintage express itself, during the blending of the grape varieties. Each extra brut vintage will therefore be different in order to perceive all the organoleptic qualities offered by Mother Nature.

TERROIR : Clay-limestone for Pinot noir. Average age of the vineyard: Minimum 50 years

BLEND : Year 2009 - 80% Pinot noir, 10% Meunier and 10% Chardonnay

DOSAGE : 1 g/L

FORMATS : Limited edition of 2550 bottles and 291 magnums – Special antique bottle

VINIFICATION :

– Selection at harvest of grapes from the oldest plots, thus offering the richest characteristics of the Terroir’s identity
– During pressing, exclusive selection of “Tête de Cuvée” juices
– Vinification entirely in oak barrels
– Absence of malolactic fermentation, preserving all the natural acidity of the grape.
– Bottling without filtration
– Respect for the old rules for the creation of foam, by using a cork stopper instead of metal capsules
– Aging of bottles in our cellars for at least 10 years (instead of the 3 usually required)
– Limited edition of 3570 bottles

TASTING : The "Golden Gold" color of this 2008 Vintage barely reveals its age. On the nose, a great purity emerges, giving way to scents of hops, cereals like an ear of wheat, lavender. Superb delicately vanilla scents, cappuccino, sensual sweetness perfect this olfactory sense. On the palate, an obvious minerality lets express an earthy side of sprouted barley, blond tobacco, whisky barrel. A smooth Champagne, with great flavor and incredible freshness after resting in the cellar for more than 10 years.

PAIRINGS : It is recommended to decant this Champagne for around 30 minutes before tasting it at 12°C so that the energy dormant during these long years of aging can reach its full potential.
Great connoisseurs will appreciate this Vintage Champagne as an aperitif.
But this great wine allows for the most unusual pairings, such as a sea urchin and crab nage with saffron, a risotto with truffles and parmesan, or even a superb piece of lightly grilled beef.
