Geoffroy - Empreinte 2017

This Champagne is the imprint of the Pinot Noir grape variety from the heart of the Cumières terroir.

The goal is to offer each year the best expression of Pinot Noir from a few plots of the Terroir. This Champagne finds its complexity and substance thanks to its clay-limestone soil and then reveals an elegance revealing the great Terroirs.

TERROIR : Clayey and limestone, with fragments of millstone (flint). Selection of identity plots of Cumières (Barremonts, Demoiselles, Houtrants). Average age of the vineyard: 30 years

BLEND : Vintage 2017 - 100% Pinot noir

DOSAGE : 3 g/L

VINIFICATION : Manual harvest with sorting. Traditional Coquard press. Vinification by plot in thermoregulated enamelled steel vats. Reserve wine partly preserved in oak tuns. Malolactic fermentation avoided.

TASTING : The pure expression of the meunier delivers its fruitiness and roundness with the finesse and elegance of the grape varieties that accompany it. The perfect maturity of the grapes gives this brut nature an iodized, spicy and suave side punctuated by a pleasant freshness.

PAIRINGS : A non-dosage Champagne is always perfect as an aperitif. But if you accompany it with a few oysters, it will enhance the iodized note of the shellfish. It will also marry perfectly with new culinary habits. Its refined structure calls for a cuisine that respects the original flavors, without artifice. Finally, a perfectly mature Brie de Meaux will be a pleasant companion at the end of the meal.
