The Premier Cru de Pierry is a blend of Chardonnay and Pinot Meunier. It is a wine of great finesse revealing the minerality of the Pierry terroirs.
GRAPE VARIETIES AND TERROIRS
Blend composed of 70% Chardonnay and 30% Pinot Meunier
Soil composed of 50% chalk and 50% flint
Vineyards located in the villages of Pierry (places called Les Rocherets and Corrigot )
VINIFICATION
Manual harvest with sorting of grapes
Direct pressing with selection of the first juices
Cold settling for 12 to 24 hours without enzyme then barreling
Fermentation in barrels, demi-muids and tuns
BREEDING
8 months undergrowth
40 months on slats in the cellar minimum
3 months minimum after disgorging
Partial malolactic fermentation
No sticking and light filtration
Disgorging with liqueur vinified and aged in barrels
