Nicolas Maillart - Chaillots Gillis 2012
This Cuvée is named after 2 places located in Ecueil on the hillsides. These are 2 plots of these places that serve as a basis for the development of this Cuvée. Nearly 40 years old, the vine develops concentrated grapes, with muscat notes as the harvest approaches. The production of this Cuvée is reduced and remains reserved for the most interesting Vintages. With a natural balance, this Cuvée is sold only as Extra-Brut.
Composition :
Made exclusively from Chardonnay, this Cuvée is vinified in barrels and then aged for around 6 months with stirring. Malolactic fermentation is not used to preserve the freshness of this wine.
Tasting:
A deep yellow color and fine bubbles with a harmonious release form a delicate disc. The nose is powerful with light woody notes, a great frankness in the aromas: notes of candied citrus fruits and chalk, candied orange peel. On the palate, we are surprised by the freshness of the wine. We find a mouth of a beautiful complexity which confirms the olfactory sensation, a great harmony. The sensation of balance dominates, in the finish we remain on liquorice notes.
- Village : Écueil 1er cru, 2 plots "Chaillots" and "Gillis". Southern exposure, mid-slope.
- Grape variety : 100% Chardonnay
- Soils : Ypresian clay and marl soils. Some traces of calcareous sands in the Gillis.

Soil tillage. Approach to treatments using biological, biodynamic and more traditional methods if necessary. Respect for the plant's rhythms.
